I am not a natural at cake. That said, I’ve been wanting to make a chiffon cake for a while. First, because they look, in the words of Liam Gallagher: cool as fuck. That height! The coloured sponges. That icing dripping down the sides… And second, because the idea of a sponge so light you can poke it and watch it spring back into shape does actually turn me on.
